Idli

Idli is South India’s most popular breakfast. It is made by fermenting rice and urad dal batter. Sambar and coconut chutney are given with idli.

Ingredients:

  1. Rice – 1 cup
  2. Urad dal – 1/4 cup
  3. Curd – 1/2 cup
  4. Salt – according to taste
  5. Water – as needed

Method:

  1. Wash and soak the rice and urad dal for around four or five hours.
  2. To get a smooth batter, grind the soaked rice and urad dal.
  3. Mix the batter thoroughly after adding the curd and salt.
  4. Cover the batter and allow it to ferment in a warm place for eight to ten hours.
  5. Fill the idli mold with the fermented batter, then steam it.
  6. Serve the idlis hot, finished off with coconut chutney and sambar

Dosa

Dosa is another popular South Indian breakfast. It is made by making a thin batter of rice and urad dal and cooking it in a pan. Dosa is served with potato bhaji, coconut chutney, and sambhar.

Ingredients:

  1. Rice – 1 cup
  2. Urad dal – 1/4 cup
  3. Curd – 1/4 cup
  4. Salt – as per taste
  5. Water – as per requirement
  6. Oil – for frying

Method:

  1. Prepare the batter according to the instructions for making idli.
  2. Spread the batter thinly on the pan.
  3. Cover the pan and cook on low flame.

Upma

  9. Peas – 1/2 cup
  10. Salt – as per taste

Method:

  1. Wash the semolina and drench it for 15 minutes.
  2. Heat the oil in a skillet and add the cumin seeds, mustard seeds, and curry leaves.
  3. Add onion and green chili and fry.
  4. Add carrots and peas and fry.
  5. Add soaked semolina and mix well.
  6. Add salt and cook while adding water.
  7. When the upma thickens, turn off the gas.
  8. Serve the upma hot with coconut chutney.

Medu Vada is a fried dish. It is made by making round balls of urad dal batter and frying them in oil. Coconut Chutney and Sambar accompany Medu Vada.

Ingredients:

  1. Urad dal – 1 cup
  2. Green chili – 2 (finely chopped)
  3. Ginger – 1 inch (grated)
  4. Curry leaves – few
  5. Salt – to taste
  6. Oil – for frying

Method:

Wash and soak urad dal for 4-5 hours

  1. Grind the soaked dal to make a smooth batter.
  2. Add green chili, ginger, curry leaves, and salt to the batter and mix well.
