Ingredients: How to Make Crispy Hing Kachori
To prepare the dough
- Maida – 2 cups
- Ghee – 4 tbsp
- Salt – as per taste
- Water – as per need
For stuffing
1. Urad dal – ½ cup (soaked and coarsely ground)
2. Asafoetida – ¼ tsp
3. Ginger paste – 1 tsp
4. Green chilli – 1-2 (finely chopped)
5. Coriander powder – 1 tsp
6. Garam masala – ½ tsp
7. Red chilli powder – ½ tsp
8. Salt – as per taste
9. Oil – 1 tbsp
Method:
- First, prepare the dough – Add ghee and salt to the flour and mix until it looks like a crumble. Now add water little by little, knead a soft dough, cover it, and keep it aside for 20 minutes.
- Make the filling- Heat oil in a pan, add asafoetida, ginger paste, and green chilies, and fry it. Now add ground urad dal and cook it on low flame. After this, add coriander powder, garam masala, red chili powder, and salt and mix well. Cook the stuffing till it becomes slightly dry and aromatic. Let it cool.
- Prepare the kachoris- Make small balls of kneaded dough. Add 1-2 teaspoons of prepared urad dal stuffing to each ball. Seal the edges and roll it flat with a light hand.
- Fry- Now heat oil in a pan. Deep fry the kachoris on medium flame till they become golden and crispy.
- Serve- Serve hot asafoetida kachoris with chutney, curd, or potato curry.
