Authentic Dhaba-style mutton curry? Ingredients.

For marination.

1/2 kg mutton.

1/2 tsp turmeric.

1 tsp red chilli powder.

3 tsp curd.

Salt to taste For the curry.

1/2 tsp red chilli powder.

1/2 tsp turmeric.

2 tsp oil.

1 tsp cumin powder.

1 tsp coriander powder.

1 tsp garam masala.

1 tsp cumin seeds.

3 garlic cloves.

2 red chillies.

2 onions chopped.

2 tomatoes chopped.

1 tbsp ginger-garlic paste.

Salt to taste.

Handful of curry leaves.

Coriander leaves for garnishing.

Method:

First of all, clean and wash the mutton thoroughly. Then drain the water and marinate it with red chilli powder, turmeric, curd and salt. Keep aside for 20-30 minutes.

Once done, put the marinated mutton in a pressure cooker. Then add oil, turmeric, red chilli powder, cumin powder, coriander powder and garam masala and mix well.

After this, add ½ cup water and cook till the mutton becomes soft. Keep it aside.

After this, heat the oil in a pan. Add cumin seeds, garlic cloves, red chillies, curry leaves and let them crackle. Then add onions and cook till they turn golden brown.

Add ginger-garlic paste and fresh coriander leaves and mix well.

Now add chopped tomatoes and cook till they become soft.

Then add the cooked mutton along with the prepared masala.

Cover the lid of the pan and cook on low flame for about 10-15 minutes.

Garnish with coriander leaves and serve hot!
